Ingredients
For the meatballs:
2Tablespoonsolive oil
1lbground chicken
1/2cupgrated parmesan cheese
1/2cupbread crumbs
1/2teaspoongarlic powder
1/2teaspoononion powder
2Tablespoonsfinely chopped parsely
1teaspoongarlic salt
1teaspoonblack pepper
1egg
1/2cupmilk
For the marinara:
2Tablespoonsolive oil
2Tablespoonsminced garlic
1 14.5ozcan crushed tomatoes
1teaspoonred pepper flakes
1Tablespoontomato paste
1cupshredded mozzarella cheese
1cupgrated parmesan cheese
1-1/2cupsmarinara sauce
garnish with parsley and grated parmesan cheeseoptional
Instructions
Preheat oven to 400 degrees.
In a large bowl combine all the ingredients (EXCEPT the olive oil), for the meatballs, mix well. Form into 15 meatballs. Place 2 Tablespoons oil into a heavy skillet. Add meatballs and cook on medium heat until browned, about 5 minutes. Remove from skillet and set aside.
In the same skillet add 2 Tablespoons olive oil and minced garlic and cook over medium heat about 30 seconds. Add crushed tomatoes, red pepper flakes, tomato paste, and marinara. Stir to combine and add the meatballs back into skillet. Top with mozzarella and parmesan cheese and bake for 10 minutes until cheese is melted and bubbling. Garnish with additional parsley and parmesan cheese.
