Ingredients

  • 4 cups peeled shredded carrots
  • ½ cup low fat plain yogurt
  • 1-20 oz can crushed pineapple reserve 1 T pineapple juice and discard the rest
  • 2 tbsp brown sugar
  • ¼ tsp salt
  • 1 cup raisins
  • 1 cup glazed pecans chopped

Instructions

  • In a small bowl whisk together yogurt, pineapple juice, brown sugar, and salt, set aside
  • In a large bowl mix the carrots crushed pineapple, raisins, and pecans. Pour yogurt mixture over carrots and mix until combined. Chill until ready to serve and garnish with additional brown sugar (optional).
