Beef and Barley Soup
Wholesome, hearty, and packed full of flavor this Beef and Barley Soup is the perfect meal any night of the week that your family will love.
Servings 6 people
- 2-15 oz packages of refrigerated cooked beef tips in gravy
- 2 tbsp oil
- 1 medium onion chopped
- 2 tbsp minced garlic
- 2 tbsp tomato paste
- 6 cups low sodium beef broth
- 3 medium potatoes peeled and cubed
- 3 carrots peeled and diced
- 2 stalks of celery diced
- 3/4 cup pearl barley
- 1/2 cup frozen corn
- 1/2 cup frozen peas
- 1/2 cup frozen green beans
- 1 tsp dry onion soup mix
- Fresh rosemary for garnishing
In a large stockpot add oil and sauté onion and garlic until fragrant.
Add in beef broth, tomato paste, celery, carrots, barley, dry onion soup mix, and potatoes. Cover and cook over medium heat for 30 minutes.
Add frozen peas, corn and beans. Cover and cook an additional 20 minutes. Uncover, stir and let simmer 5 minutes until soup thickens slightly. Garnish with fresh rosemary.
