2-15ozpackages of refrigerated cooked beef tips in gravy
2tbspoil
1medium onionchopped
2tbspminced garlic
2tbsptomato paste
6cupslow sodium beef broth
3medium potatoespeeled and cubed
3carrotspeeled and diced
2stalks of celerydiced
3/4cuppearl barley
1/2cupfrozen corn
1/2cupfrozen peas
1/2cupfrozen green beans
1tspdry onion soup mix
Fresh rosemary for garnishing
Instructions
In a large stockpot add oil and sauté onion and garlic until fragrant.
Add in beef broth, tomato paste, celery, carrots, barley, dry onion soup mix, and potatoes. Cover and cook over medium heat for 30 minutes.
Add frozen peas, corn and beans. Cover and cook an additional 20 minutes. Uncover, stir and let simmer 5 minutes until soup thickens slightly. Garnish with fresh rosemary.
