Ingredients
1poundground beef
1/2cuponiondiced
2cupsmushroomssliced
1tbspMCT oil or olive oil
1package baconI used naked bacon, sliced in half
1/2cupshredded cheddar cheese
1/2cupshredded white cheddar cheese
1tbspdry onion soup mix
1tspgarlic powder
1tbspWorcestershire sauce
green onionsdiced for garnish
Instructions
Preheat oven to 400 degrees. In a medium sized skillet over medium high heat add oil, allow to heat and pour in diced onions and mushrooms. Sauté until tender about 4-5 minutes and set aside.
Using a 12 cup muffin tin, line each muffin cup with bacon, using one piece that has been cut in half. In a medium sized mixing bowl combine the ground beef, onion soup mix, garlic powder, and Worcestershire sauce. Using a cookie scoop or spoon add meat mixture to each muffin cup about 2/3 of the way full.
Using the bottom of a glass or your fingers, make a well in the top of the meat mixture and top with sautéed mushrooms and onions. Bake for 30 minutes. The last 5 minutes remove and top with cheeses then finish cooking.
