Keto Cheeseburger Muffins

Keto cheeseburger muffins are the quintessential finger food that will pack a punch in the first bite. Modestly topped with a sautéed onion and mushroom combination, shredded cheeses and held together by bacon.

Ingredients

  • 1 pound ground beef
  • 1/2 cup onion diced
  • 2 cups mushrooms sliced
  • 1 tbsp MCT oil or olive oil
  • 1 package bacon I used naked bacon, sliced in half
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded white cheddar cheese
  • 1 tbsp dry onion soup mix
  • 1 tsp garlic powder
  • 1 tbsp Worcestershire sauce
  • green onions diced for garnish

Instructions

  • Preheat oven to 400 degrees. In a medium sized skillet over medium high heat add oil, allow to heat and pour in diced onions and mushrooms. Sauté until tender about 4-5 minutes and set aside.
  • Using a 12 cup muffin tin, line each muffin cup with bacon, using one piece that has been cut in half. In a medium sized mixing bowl combine the ground beef, onion soup mix, garlic powder, and Worcestershire sauce. Using a cookie scoop or spoon add meat mixture to each muffin cup about 2/3 of the way full.
  • Using the bottom of a glass or your fingers, make a well in the top of the meat mixture and top with sautéed mushrooms and onions. Bake for 30 minutes. The last 5 minutes remove and top with cheeses then finish cooking.
