Ingredients
1cuprolled oatsnot quick cooking oats
1cupraw coconut
1 cup pecans
2 cupspitted dates
1tbspMCT oil or coconut oil
1/2tbspmaple syrup
1/2tspsalt
1/2tspvanilla
2tbspground flax seed or flaxseed meal
1/2cuprice crispy cereal
2 scoopflavored or unflavored protein powder
Instructions
Line a sheet pan with parchment paper and set aside. Using a food processor add rolled oats and mix for 30 seconds. Add in shredded coconut and pecans and mix another 30 seconds.
Add in dates, MCT oil, salt, vanilla, maple syrup, and protein powder, process until blended.
Add the rice crispy's and ground flax seed to food processor and continue mixing until all ingredients are incorporated. Using a cookie scoop or spoon, form into balls and place on prepared sheet pan. Place in the freezer for 1 hour.
