Ingredients

  • 1 cup rolled oats not quick cooking oats
  • 1 cup raw coconut
  • 1 cup pecans
  • 2 cups pitted dates
  • 1 tbsp MCT oil or coconut oil
  • 1/2 tbsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp vanilla
  • 2 tbsp ground flax seed or flaxseed meal
  • 1/2 cup rice crispy cereal
  • 2 scoop flavored or unflavored protein powder

Instructions

  • Line a sheet pan with parchment paper and set aside.  Using a food processor add rolled oats and mix for 30 seconds.  Add in shredded coconut and pecans and mix another 30 seconds. 
  • Add in dates, MCT oil, salt, vanilla, maple syrup, and protein powder, process until blended.
  • Add the rice crispy's and ground flax seed to food processor and continue mixing until all ingredients are incorporated.  Using a cookie scoop or spoon, form into balls and place on prepared sheet pan.  Place in the freezer for 1 hour.
