Oven Roasted Red Potatoes
Oven roasted red potatoes will be the perfect side dish for all your Summer cookouts. Bursting with flavor, crispy on the outside, tender on the inside and ready in 30 minutes.

- 1.5 LB baby red potatoes quartered
- 1 tbsp coconut oil melted
- 1 packet taco seasoning
- 2 tsp fresh cracked pepper
- chopped parsley to garnish
- chili paste for dipping (optional)
Preheat oven to 400 degrees and line a rimmed baking sheet with parchment paper and set aside. Cut potatoes into quarters and place in a large mixing bowl.
Melt 1 tablespoon of coconut oil in a microwave safe dish and pour over potatoes and stir to coat. Add taco seasoning and fresh cracked pepper, stir again. Pour potatoes onto prepared baking sheet and bake for 30 minutes. Garnish with fresh parsley and serve with chili sauce for dipping.
