Ingredients

  • 1 lb ground beef
  • 1 red onion chopped
  • 1- 4 oz can green chilis
  • 1-15 oz can black beans drained
  • 1 tbsp taco seasoning
  • 1-8 oz bottle taco sauce
  • 10-6 inch corn tortillas cut into 1-inch pieces
  • 1 tbsp sour cream
  • 2 cups grated cheddar cheese divided
  • 1/3 cup pico de gallo
  • 2 tbsp cilantro chopped

Instructions

  • In a large skillet over medium high heat cook ground beef and onions until beef is no longer pink about 5-7 minutes, drain.
  • Cut the corn tortillas into 1-inch pieces and add to the ground beef mixture along with green chilis, black beans (drained) taco seasoning, taco sauce, and 1 cup grated cheddar cheese. Mix and cook until heated through and cheese is melted. Top with remaining cheese and a tablespoon of sour cream mix and garnish with fresh pico de gallo and cilantro.
