Cheesy Cauliflower Casserole
When it comes to a side dish this Cheesy Cauliflower Casserole has got you covered. Baked with 3 kinds of cheese and topped with bacon even the pickiest of eaters will love every creamy bite.
- 4 cups cauliflower
- 6 pieces of thick cut bacon chopped and cooked
- 1 tbsp garlic minced
- 1 tsp garlic salt
- 1 tsp black pepper
- ½ cup heavy cream
- 2 cups grated Colby cheese divided
- 2 cups grated Parmesan cheese divided
- 2 cups grated Muenster cheese divided
- Fresh chopped green onion and sage for garnish
Preheat oven to 400 degrees. In a large skillet cook chopped bacon until crisp, set aside and reserve 2 Tablespoons of bacon grease in skillet.
Add cauliflower to skillet and cook over medium high heat for 3 minutes until the cauliflower begins to soften. Add in 1 tablespoon of minced garlic and stir to combine, then pour the bacon back into the skillet along with 1 teaspoon garlic salt and pepper. Pour cream over and mix.
Add half the cheese and mix to combine. Top with the remaining cheese and bake for 15 minutes until cheese is hot and bubbling and cauliflower is tender.
