Ingredients

  • 4 thin sliced chicken breast
  • 8 slices of original cut bacon
  • 1 10-1/2 oz can cheddar cheese
  • ¼ cup chopped chipotle peppers in adobo sauce
  • 1/3 cup whole milk or low fat
  • 1 cup grated pepper jack cheese
  • 2 tbsp butter
  • cilantro for garnish

Instructions

Wrap each chicken breast with 2 pieces of bacon. In a large skillet melt butter over medium high heat and add chicken breast.

    Cook chicken 5 minutes per side or until no longer pink (if you want crispier bacon place in the oven on high broil for 1-2 minutes, watch closely).

      Remove chicken from skillet and set aside. Wipe skillet out, carefully and add cheddar cheese, peppers, milk, and grated pepper jack cheese. Whisk to combine and heat until cheese has melted. Add chicken back to skillet and cook until heated through. Spoon chili cheese sauce over the top of each chicken breast and garnish with fresh cilantro.
