3large russet potatoespeeled and cut into cubes
4cupscooked cubed ham
3cupsvegetable broth
4cupsfrozenthawed or canned yellow corn
5celery stalksdiced
1cuponiondiced
4tspminced garlic
½tspgarlic salt
½tsponion powder
½tsppepper
2tbspcornstarch
2cupswhole milk
2cupsfreshly grated cheddar cheese
1cupsour cream
chopped parsley for garnishing
Instructions
Place first 10 ingredients in a 6qt crock pot and cook on low for 7 hours.
(you can check after 6 hours if potatoes are soft).
30 minutes before soup is done, whisk together cornstarch and milk and pour into soup. Turn to high and finish cooking. Stir in cheese and sour cream and let sit a few minutes until cheese has fully melted. Garnish with fresh chopped parsley and serve warm.
