Ingredients
10tbspbutter, melteddivided
1-2/3cupsyellow cornmeal
1/3cupssugar
1cupflour
1-1/2tspbaking powder
½tspbaking soda
1tspsalt
2tbsphoney
2cupslowfat buttermilk
2eggsslightly beaten
Instructions
Preheat oven to 425 degrees. Melt 2 tbsp of butter and pour into a 10 inch cast iron skillet. Brush melted butter on the bottom and sides of skillet and place in the oven to preheat.
In a large bowl whisk together cornmeal, sugar, flour, baking powder, baking soda, and salt.
Pour in honey, buttermilk, eggs, and remining 8 tbsp of melted butter. Stir to combine. Pour into preheated skillet and bake for 25 minutes. Serve with butter and honey (optional)
