Ingredients:

For the Salad:

  • 1 rotisserie chicken, breast meat only
  • 1 cup honey roasted pecans
  • 1 cup diced granny smith apples, or apples of choice
  • 1/2 cup diced red onion
  • 1 cup dried cranberries
  • 1 cup red grapes, sliced in half
  • 2 avocados, sliced
  • 1 5oz package baby spinach
  • salt and cracked pepper to taste

For the Dressing:

  • 1/3 cup plain greek yogurt
  • 2 Tablespoons mayonnaise
  • 2 Tablespoons apple cider vinegar
  • 1 Tablespoon rosemary, minced
  • 1/2 teaspoon sugar

Directions:

  1. Shred breast meat from rotisserie chicken, place in a large bowl and add pecans, apples, red onion, cranberries, and grapes. Mix to combine.
  2. In a separate bowl whisk together the dressing ingredients and pour over salad.  Toss to combine and top with sliced avocados.
  3. Place baby spinach on a plate and spoon salad on top.  Season with salt and pepper.
  • You can add the spinach into the salad as mix to combine as well.
