Balsamic Chicken and Mushrooms

How many times have you heard someone in your family say “chicken” for dinner again?  I know I have because I eat a ton of chicken, but this Cheesy Balsamic Chicken and Mushroom Skillet is a great way to take the ordinary into extraordinary.  Chicken doesn’t have to be boring and it sure doesn’t have to always be cooked the same.  There are so many ways to spice up your chicken recipes and this Chicken and Mushroom Skillet will do just that. 

I love to use the thin sliced boneless skinless chicken breast, they are much easier to cook without over cooking and drying them out.  They also take less time to cook which is a huge bonus for me who loves to spend time in the kitchen, just not too much time.  This Cheesy Chicken and Mushroom Skillet has several layers of flavor starting with the seasoned chicken breast and ending with melted gooey pieces of pepper jack cheese.

How do you cook chicken with mushrooms?

  • Heat a heavy skillet over medium high heat and add butter.  Carefully add in your chicken and cook until both sides are golden brown.
  • Remove chicken from skillet and set aside cover to keep warm.
  • In the same skillet add a little more butter and your mushrooms.  At this point you want to add your seasonings and sauté mushrooms for 3-4 minutes.
  • Once mushrooms have been sautéed add your chicken back into the skillet and cook about 2 minutes more to heat the chicken.

What is balsamic chicken?

Balsamic chicken is simply chicken that is cooked in a balsamic vinegar sauce or glaze which enhances and gives great flavor to the chicken.  You can cook it on the stove top, bake it in the oven or even BBQ balsamic chicken.  It really is a delicious and easy way to add flavor without being complicated.

What to serve with Balsamic Chicken?

There are a lot of great things you can serve with balsamic chicken, here are a few of my favorites:

How do you make Cheesy Balsamic Chicken and Mushroom Skillet?

  1. Season chicken breast on both sides with garlic salt and chicken seasoning.
  2. Heat a skillet over medium high heat and add butter.  Allow butter to melt and add in chicken breasts.  Cook chicken 5 minutes each side until golden brown (if you are using regular chicken breast you will have to adjust the time to 8-10 minutes a side).  Remove chicken from skillet, set aside and cover to keep warm.
  3. In the same skillet add additional butter over medium heat let melt and add in garlic, Italian seasoning, mushrooms, and diced onions.  Sauté 3 minutes and add in balsamic vinegar and Worcestershire sauce.   Whisk to mix and cook another 1-2 minutes.
  4. Add chicken back into skillet and top each chicken breast with 1/2 slice (0r more if desired) of pepper jack cheese.  Keep on stovetop over low heat to allow cheese to melt and then garnish with parsley and serve.

  • 4 thin sliced boneless, skinless chicken breast
  • 1 tsp garlic salt
  • 1 tsp chicken seasoning
  • 4 tbsp butter, divided
  • 2 tsp Italian seasoning
  • 1 tsp minced garlic
  • 8oz baby bella mushrooms, sliced
  • 1/2 cup chopped onion
  • 2 tbsp balsamic vinegar
  • 2 tbsp Worcestershire sauce
  • 2 slices of pepper jack cheese, halved

Directions:

  1. Season chicken breast on both sides with garlic salt and chicken seasoning.
  2. Heat a skillet over medium high heat and add 2 tbsp of butter.  Allow butter to melt and add in chicken breasts.  Cook chicken 5 minutes each side until golden brown (if you are using regular chicken breast you will have to adjust the time to 8-10 minutes a side).  Remove chicken from skillet, set aside and cover to keep warm.
  3. In the same skillet add the additional 2 tbsp of butter over medium heat.  Let butter melt and add in minced garlic, Italian seasoning, mushrooms, and diced onions.  Sauté 3 minutes and add in balsamic vinegar and Worcestershire sauce.  Whisk to combine and cook another 1-2 minutes.
  4. Add chicken back into skillet and top each chicken breast with 1/2 slice (0r more if desired) of pepper jack cheese.  Keep on stovetop over low heat to allow cheese to melt and then garnish with parsley and serve.
